You know what today is? It's VEGAN DAY! All dishes came from "Vegan Diner" by Julie Hasson. I'm about at the end of what I want to make in this book, so if anyone has any suggestions for a vegan cookbook, please let me know. I want recipes for breakfast, lunch and dinner.
Back to the cooking...
I was supposed to make breakfast, but didn't get up early enough to do so. Not feeling quite myself this week. No matter, this dish is called Blueberry Loaf Cake and worked well for a late afternoon snack and dessert.

This cake was a little heavier than some of the other cakes/breads I've made from this cookbook. Also, the glaze was definitely missing something. When I gave it a little taste, it tasted like wet confectioners' sugar. I'm not saying I didn't like it - it certainly won't go to waste - but it isn't as good as the Banana-Chocolate Chip Bread I made several weeks ago.
I was definitely looking forward to dinner. It's hot in the Chicago-area. Like 100-degrees + 100% humidity hot and it really sucks. This dish was made in my slow cooker so I was able to turn off the oven as soon as the cake was done.
This recipe is called Not Your Mama's Pot Roast with Roasted Vegetables. I was planning on making Garlic Mashers, but changed my mind since it had potatoes in it already.

I really regret not having the mashed potatoes. My husband ate two helpings of the "pot roast" but I found it to be a little chewier than I'd like.
I've decided that the faux-meat isn't one of my favorite things. I've loved the other dishes that I've made that didn't include it. For example, the Almost Sloppy Joes I made a couple of weeks ago had texturized protein and mushrooms and I thought those tasted fantastic! Better than meat-Sloppy Joes even! When I try to recreate meat, it just doesn't do it for me.
I'm going to be MIA in the kitchen for the next several days. I'm going to be out promoting myself for the Job-That-Pays-the-Bills. I'm hoping to get up some posts that I've been meaning to write for months though. Keep your fingers crossed!
