My husband rarely cooks, but he makes a MEAN breakfast.  His eggs come out perfect sunnyside-up.  The bacon is oh-so-crisp.  There are hash browns that make my mouth water.  Of course, this is the exact menu we have each time… not that I mind at all.  On occasion, I do enjoy mixing things up a little and that’s when I take over.

So when I look at the ingredients of this recipe, it mimics very closely my husband’s "Breakfast of Success."  I love omelets!  I LOVE me some bacon!  And everything is better with cheese.  I decided to give my loving husband a break and made this yummy looking Bacon Potato Omelet.

Bacon Potato Omelet
I was ridiculously proud of the way it looked when I was done.  Usually my omelets are broken, oozing messes.  They’re in one piece, but they’re never what I’d call “pretty”.  Yeah, I know it all looks like mush in our stomach, but I do enjoy looking at nice looking food before I eat it.

It looked perfectly cooked and was almost identical to the picture published with the recipe.

When I plan meals, I always go for dinner menus.  What that means is that I have nothing to make for lunch unless I’m going with a standard lunchmeat sandwich or salad.  It isn’t a bad thing, but every once in a while I crave something a little more complex.  With my chores at home adding in errands and working on the blogs, I usually don’t feel like making gigantic meals.

I guess my point is I like looking for simple recipes using some convenience foods that I can make healthier.  If I can stay out of the fast food line at lunch time, that’s even better.

So I saw this recipe and was excited.  It used sandwich steaks that can be made in a jiffy.  Also, it’s dressed up with vegetables and isn’t a sandwich (or at least it wasn’t meant to be eaten as a sandwich).

Bruschetta Minute Steaks
So starting with the obvious – it isn’t the same kind of steak.  I couldn’t find a “beef minute steak” so I went with what I found as the next best thing: a sandwich steak.  They had a comparable cook time and I could stack two on top of each other to give the same amount of thickness.

It didn’t turn out as well as I hoped.  Looking back, I probably should have bought a flat steak or flank steak and cut it into smaller pieces, but I can't change the past.

My sandwich steaks didn’t hold together well, so I decided to turn it Philly style where the beef was shredded.  Although I plated it separately, I decided to eat these as a sandwich (picture shown later) on a pretzel roll.

Individual Banana Puddings

I’ll be honest, I often pick recipes based on what I want to eat.  That’s not to say that I don’t take my husband’s taste into account – I know what he likes and doesn’t like and wouldn’t force him to eat something he would hate – but for the most part I’m the one who sets the menu for the week.

This recipe is all about him though.

He LOVES banana pudding and can even whip up a quickie batch using instant pudding and Cool Whip.  I enjoy making pudding from scratch so when I saw this recipe, I knew he would love it.

Individual Banana Puddings
First I need to state the obvious… it isn’t an individual pudding serving.  I really wanted to try the recipe, but don’t own ramekins.  I know.  THE HORROR!  I found a serving dish that would accommodate the amount of pudding, bananas and cookies and made it as a dessert dish.  This picture is of an individual serving.  My pudding looks thicker and seems to be more banana and cookie than “puddingish”.
